Collaboration with Food Traceability Services: Key Strategies FryData™ Is Preparing and Future Plans

The frying process, the final stage of the food supply chain, has long remained a “black box” in the food industry.
While raw materials, processing, logistics, and distribution are increasingly tracked through digital systems, there has been very little real-time data available from the actual cooking stage, such as TPM, temperature profiles, and oil change events.

FryData™ is an IoT platform designed to fill this gap for the first time through our SSO-2401 oil degradation sensor and smart fryer solutions.
With the recent strengthening of food traceability regulations in Korea and abroad, including FSMA 204 (the U.S. FDA Food Traceability Rule, scheduled for enforcement on July 20, 2028), many food traceability platforms are seeking to strengthen transformation-stage data covering processing and cooking operations.




In response, FryData™ is actively pursuing partnerships with domestic and global food traceability service providers.
In this article, we would like to transparently share the key areas we are preparing for collaboration and outline our concrete plans going forward.

Our goal is not simply to provide data, but to build a mutually beneficial, complementary partnership.


1. Why We Collaborate with Food Traceability Services

Existing platforms such as IBM Food Trust and Food4Chain cover most of the farm-to-table journey, but detailed parameters from the actual frying process are still largely missing.

FryData™ provides real-time cooking data that has not previously been available, including:

  • TPM measurement (0–40%, ±2% accuracy)
  • Temperature monitoring at 30-second to 1-minute intervals
  • Automatic oil-change event triggers when TPM exceeds 23%

This enables faster recall response, stronger proof of quality consistency, and measurable operational ROI, including 15–30% savings in oil costs.


2. Key Areas We Are Preparing for Collaboration

From partnership proposals to PoC completion, we are taking a structured and systematic approach.
Our main preparations are as follows:

1) Technical Integration Readiness (API and Standards Compliance)

  • Preparation of FryData™ API v3.0
  • Support for REST, WebSocket real-time streaming, and MQTT/HTTPS ingest endpoints
  • Development of a GS1/EPCIS-compatible mapping plan for automatic linkage with Transformation CTEs
  • Full implementation of multi-tenant security, including JWT, API keys, TLS 1.3, and strict data isolation

2) PoC (Proof of Concept) Planning

  • Duration: 3 to 6 months
  • Scale: 5 to 10 fryers at a domestic franchise site or an overseas pilot factory
  • Key metrics:
    • Data latency under 5 seconds
    • TPM accuracy verification
    • 100% success rate for oil-change event detection
    • Quantified ROI, including oil cost reduction and defect rate improvement

3) ROI Validation Materials

  • Building a pilot result database covering areas such as extended oil replacement cycles and reduced waste
  • Supporting automated documentation for FSMA 204 compliance

4) Joint Solution Development Direction

  • Exploring joint solution or co-selling models
  • Discussing referral fees or shared FryData™ SaaS sales structures

3. Our Next Steps

Starting in the second half of 2026, we plan to move forward in the following way:

Domestic First

We will prioritize PoCs with Korean food traceability platforms based on blockchain and AI technologies.
Our goal is to build an integrated solution that strengthens both on-site manufacturing control and traceability.

Global Expansion

We are also actively pursuing collaboration with major global platforms such as IBM Food Trust, SafetyChain, FoodLogiQ, and Wherefour.
We have already prepared our API design documents and PoC plans, and in line with our target to enter the North American market in 2027, we plan to develop joint solutions for FSMA 204 compliance.

Regardless of platform size, we approach potential partners with a clear value proposition:
